How the data is kept

Backed up nightly, and restored nightly

A backup nobody restores is a folder. Every night the snapshot is opened and read back, and the night says so in words when it cannot be.

Tenant IDs and receipts are encrypted on the disk with a key that never leaves the server, so a stolen backup holds ciphertext and nothing else.
